Vegetarian Cauliflower Tacos
Ingredients
For the cauliflower:
2 heads of cauliflower, cut into florets (about 8 cups florets)
2 tablespoons avocado or olive oil
2 teaspoons chili powder
1 teaspoon paprika
1 teaspoon salt
1 teaspoon onion powder
1 teaspoon garlic powder
½ teaspoon salt
Pinch of cayenne
For serving:
Corn tortillas, warmed
Guacamole
Pickled red onions
El Viajero Queso Fresco
Fresh cilantro
Rice and beans, on the side
Directions
Preheat oven to 420F
In a small bowl, combine all the spices and set aside
Add the cauliflower florets to a large bowl, then drizzle with the oil
Add the spice mixture and toss well to combine
Arrange the cauliflower evenly on a lined baking sheet, and roast until tender, about 20 minutes
Once the cauliflower is done, remove it from the oven and let it cool slightly
To make the tacos, spread a layer of guacamole on the tortilla. Add the cauliflower, then top with the pickled onions, El Viajero Queso Fresco, and cilantro. Enjoy!
