Equites

Ingredients

4 cups corn (fresh or canned, rinsed and drained)

4 tablespoons butter

2 cloves of garlic

1 jalapeño, finely diced

½ cup El Viajeros’s Queso Cotija, plus more to garnish

½ cup Mexican crema or sour cream

½ cup mayonnaise

1 teaspoon salt

Juice of 1 lime

2 teaspoons chili powder, plus more to garnish

Directions

  1. Melt the butter in a large pan, then add the jalapeño and corn. Cook until the corn and jalapeno are softened, then add the garlic until fragrant

  2. Remove from the heat and add to a large bowl. Add the El Viajero’s Queso Cotija, crema, mayonnaise, salt, lime juice, and chili powder. Stir well to combine

  3. Serve the esquites in cups or glasses, and garnish with more cotija and chili powder
