Queso Cotija Cucumber Salad

Ingredients

¼ cup Pickled Red Onions

1 serrano chile, finely chopped

¾ cup finely chopped fresh cilantro

1½ pounds Persian cucumbers, cut into 1-inch slices

10 ounces El Viajero Queso Cotija, crumbled

Juice of 3 key limes (about 2 tablespoons)

½ teaspoon sea salt

Directions

  1. In a large bowl, toss the pickled onions with the chile and the cilantro

  2. Add the cucumbers and El Viajero’s Queso Cotija

  3. Toss and season with the key lime juice and sea salt

  4. Let it rest in the refrigerator and serve it cold
