Mexican Street Corn Fritters

Ingredients

2 cups fresh corn kernels (about 2–3 ears of corn)

1/2 cup all-purpose flour

1/4 cup cornmeal

1/4 cup chopped fresh cilantro

1/4 cup chopped green onions

1/2 cup shredded cheddar cheese

1/2 teaspoon cumin

1/2 teaspoon paprika

1/4 teaspoon cayenne pepper

2 eggs

Salt and pepper to taste

Vegetable oil, for frying

El Viajero Queso Cotija, crumbled (for topping)

Directions

  1. In a large bowl, combine corn, flour, cornmeal, cilantro, green onions, cheddar, cumin, paprika, cayenne, and eggs

  2. Season with salt and pepper and mix until a thick batter forms

  3. Heat vegetable oil in a skillet over medium-high heat

  4. Scoop batter and form into patties

  5. Fry 3–4 minutes per side until golden and crispy

  6. Remove and place on a serving plate

  7. Crumble El Viajero Queso Cotija generously on top

  8. Garnish with cilantro and serve
