Fried Quesadillas

Ingredients

Chorizo, removed from casing

Queso Quesadilla (about 3 cups)

For Masa:

1 cup masa mix

1 cup water (add more if the mixture is too dry)

1 tsp salt

Directions

To make the masa:

  1. Add the mix to a medium bowl. Slowly pour in the water and add the salt to combine. Knead for 8-10 minutes, then cover with plastic wrap and let rest for 10 minutes.

  2. Meanwhile, add a small amount of oil to the pan, then add the chorizo and break it up into fine crumbles.

  3. Once the chorizo is cooked and the masa is ready, take a small circle of masa and put a small indent in the middle with your thumb. Flatten with a tortilla press or cutting board (see second reference video).

  4. On one side of the flattened masa, add a handful of the queso quesadilla and the cooked chorizo.

  5. Fold in half.

  6. Heat a clean pan with oil, then add the folded quesadilla and cook until golden-brown and toasted on both sides.
