Elote Cups
Ingredients
2 large cans of corn, rinsed
2 tablespoons salted butter
¼ cup El Viajero Queso Cotija, grated
⅓ cup mayo
⅓ cup crema
1 lime, juiced
3 tablespoons cilantro
½ red onion, finely chopped
2 scallions, thinly chopped
½ cup El Viajero Queso Fresco, crumbled
Spices (tajin, chili powder & cumin)
Directions
Add butter to a frying pan over medium heat. Once melted, add the corn and season with chili powder and cumin to taste. Once heated through, remove from heat and add to a large bowl.
To that same bowl, add mayo, crema, lime juice, cotija, red onion, scallion and a pinch of salt and stir to combine.
Evenly distribute the corn mixture to 5 cups. Then top each one equally with cilantro and queso fresco.
Garnish with the tajin (and a tortilla chip, if desired)
