Chopt-Inspired Caesar Salad
Ingredients
For the dressing:
½ cup plain Greek yogurt
1 chipotle pepper from canned chipotles in adobo
2 tablespoons olive oil
2 tablespoons mayo
2 tablespoons El Viajero’s Queso Cotija
2 limes, juiced
1 clove garlic
1 tablespoon Dijon mustard
2 teaspoons honey
1 teaspoon taco seasoning
For the salad:
About 3 cups chopped romaine lettuce
1 jalapeño, seeds removed and diced
Crushed tortilla chips
2 tablespoons El Viajero’s Queso Cotija, plus more for garnish
1 cooked, diced chicken breast
½ roma tomato, diced
½ avocado, diced
Directions
For the dressing:
Combine everything in a blender and blend until smooth.
